Egusi stew dish has its origins in Nigeria, and has become a West African classic. Egusi stew is usually made with melon seeds, meat, and greens. Egusi melon seeds are a good source of anti-oxidants and potassium. Our version this week substitutes the meat with shrimp.
Ingredients: organic: Shrimp, egusi melon seeds, spinach, red & green bell pepper, onions, scallions, celery, garlic, ginger, parsley, netatou (locust bean), crayfish powder, avocado and/or olive oil, black pepper & salt.
