The egusi dish has its origins in Nigeria, and has become a West African classic. Egusi stew is usually made with melon seeds, meat, and greens. Egusi melon seeds are a good source of anti-oxidants and potassium. Our version this week substitutes the meat with shrimp.
Ingredients: organic: Kale & collard greens, onions, shallots, scallions, garlic, red & green bell pepper, parsley, ginger; egusi melon seeds, wild-caught shrimp, crayfish powder, fish sauce, avocado oil, salt.
