Group Cooking Classes in 2025:

September 20, 2025 (Saturday) --First Baptist Church Ithaca Commissary Kitchen, 10am-12noon. REGISTRATION DEADLINE: 9/15

Classes will be held when there are at least four people signed-up for the session. If not, funds will be returned or we can add you to the next class if it works with your schedule. 

During this class you will learn how to cook two versions of stew and a side dish:

The peanut stew with meat, greens or other vegetables known as Tigadegena in Mali, Maafé in Senegal, Gisma Foye or Miya Yakoua in Niger, is a popular stew. It is served with rice, fonio, millet couscous, and more. We will also demonstrate how to make the vegan version of this dish. You can have it spiced up by adding habanero or scotch bonnet pepper up to your heat tolerance level.

The side dishes we are making are Nigerien Kopto salad (greens and peanut butter) and Ivorian Claclo or Cracro  (plantain beignets fritters). Served with a savory sauce.

At the end of class, we'll taste the dishes and take some home! Together we will also sample West African drinks and ask for your feedback on them.

Children ages 9-12 are welcome in these Adult group classes if accompanied by a participating parent.

The classes can take place at your home or at the First Baptist Church Kitchen (downtown Ithaca next to Dewitt Park).
