Fonio Mango Salad VG, V, NG, NL

A colorful fonio salad with vegetables, herbs, and mangoes. 

Fonio is a "superfood" which is used in cooking as a grain but is actually a domesticated grass seed grown in West Africa, and is appreciated by those watching their glycemic index as well as for items wonderful flavor.

Ingredients: Fonio, mango, cucumber, red onion, red and green bell peppers, red (and/or yellow) cherry tomatoes, parsley, mint, lemon juice, olive oil, black pepper & salt.
